I have the same issues. I have actually been putting off doing an art journal for a long time but I really wanted to document each day in December so I decided I was just going to make it happen. When I started it I was writing and editing myself because I not only wanted it to be a “perfect” idea of what an art journal should be but also I knew others would be reading it. After a few days of this I reminded myself that my goal was to create and document December and memories of my life and family. NOT to try to be “perfect” I decided I would write what a really wanted no matter what and if people read it fine. The journal was for me after all and I needed to remember my original intention. However by sharing it something amazing happened people responded and started to share with me! I really try not to sensor myself if I can help it. I would say for you set a goal even if its a small one. If your day does not seem exciting keep a journal about what you ate and draw the most delicious thing from the day next to it. Or write down all of the colors you run across in your day and make a little daily palette. Another good place to start is every hour write what you are doing I bet your day is more interesting than you think! I am really liking my tiny memories moleskin because it takes the pressure off of doing something big and I can just let go and enjoy the process. Hope that answers your question!
